Chocolate Coconut Birds Nest Cookies

These no bake birds nest cookies are an easy yet delicious treat for easter with only 3 ingredients. The classic combination of chocolate and coconut are not only rich and creamy in flavor but have a nice crunchy texture from the coconut.
0 In a medium size bowl add coconut.
1 In a separate microwave safe bowl add chocolate chips. Microwave at 30 second intervals stirring and returning to the microwave until the chocolate has melted.
2 Add melted chocolate into the coconut and mix until chocolate is incorporated.
3 Line a cookie sheet with parchment paper, wax paper or a silicone mat.
4 Use a cookie scoop or large spoon to scoop the chocolate coconut mixture on to your cookie sheet. Use flatter side of the spoon to make the center of the nest.
5 Add 2-3 Cadbury mini eggs per cookie.
6 Refrigerate for 1 hour and enjoy!
